A Culinary Institute of America Graduate, I am a Private Chef by profession. A Private Chef works for one family. A Personal Chef is a contractor that works for multiple clients. I am a rare commodity and most don’t quite comprehend that there are very rich people out there that don’t cook for themselves. I work in households that have a Butler, Housekeeper, Laundress, and Gardener.
Most of the time, I am alone in the kitchen with my own thoughts. MOST of the time, I am thinking about cooking, cooking science, creative food….food food food…. every day, 3 meal a day, seasonal, special occasion, catered for the Gulfstream…you name it.
All those that know me understand that Chef Sheila can only be alone with her own thoughts for just so long and then begins to become kind of unhinged. Those that know me also understand that if I don’t get this need to communicate out regularly, I get too chatty and well, long winded.
So Hello World here I come. Here is a look into my mind, my heart, and my soul.

Hi Sheila. So, you’ve taken the plunge and started a blog. Good for you. Was wondering what happened to you lately as I didn’t see your name too often on any of our “regular” blogs. Sheila, I see you’ve found your passion. There is so much genuine “love-for-cooking” in your “Ramblings.” I’m so proud of you! You make it seem like I can prepare any of the dishes you describe. I’ve only prepared breakfast, steaks, rice, some chicken and tons of spaghetti in my “short” life. You give me hope that I can do more. Like Mr. Spock used to say, “Live long and Prosper!”

Hey…thanks for the invite to visit your blog. What a treat! We area always looking for new recipes and now have another source, so thank you. Fried baloney sandwiches just seem to conjure up some really great memories. I was born in Bremerton during WWII at the old Navy Yard but when we moved to the Midwest, we had FBS. I think it was because of the amount of money my Dad made: very little. My wife, her sister, and I went back to my Mom’s family reunion 2 years ago in Fargo, ND. We took a side trip to Alexandria, MN where my sister-in-law was born and where our families shared a duplex. This was when I was 6 and my wife was 2. So, we’ve known each other for 58 years. It was really great driving around the town and looking at the old homes, the schools, noteable places. We went to dinner at a favorite restaurant and ran into a retired Navy CDR who had been my Division Officer when he was a LT and I was a PH1 at VP-31. Isn’t life strange? Thanks again…
Hey Sheila. I like the site. Maybe you can put up the green bean cassarole recipe. Put up something lite, too. My boyfriend (yeah, I got a boyfriend,now. I met him the old fashioned way, at a bar) and I both could use some lite ‘n healthy meals. I know you could come up with some good ones that taste good. Good luck with your blog!

Terry….now thats one of the coolest off hand sightings I’ve heard! I mean, I’ve been all over the world and at least once a trip ran into someone I knew in the servise. EVEN on Air Force 1 when I least expected it.
